Life can feel like a whirlwind for busy families, especially when it comes to dinnertime. Between work, school, and extracurricular activities, finding the time to prepare a balanced meal can almost seem overwhelming. In today’s post, we explore 5 easy weeknight dinner ideas to simplify the hassle and make weeknight dinners a breeze.

One Pot Pasta 

This option is perfect if you hate all the hassle and clean up that comes with using multiple pots and pans when cooking dinner. Simply cook your pasta, vegetables and protein in one pot and watch a delicious meal come to life. Use a mix of broth and water to cover the pasta and bring it to a boil, then simmer while stirring in your vegetables and protein. It’s a simple and satisfying meal that is sure to become a staple! Finish it off with some fresh herbs, butter, and a sprinkle of cheese.

Stir-Fry

Whip up a quick stir-fry using your choice of protein (such as beef, tofu, or shrimp) and a variety of colorful vegetables. Served over rice or noodles, this meal is not only balanced and healthy, but it’s also quick, simple and utterly delicious.

To make a quick stir-fry, heat a tablespoon of oil in a skillet over medium heat. Cook your protein, then set it aside. Add vegetables like bell peppers, broccoli, and carrots, and cook until tender. Return the protein to the pan, add a splash of soy sauce and ginger, and cook for a few more minutes.

Taco Night

This one is sure to be a hit with the kids! Set up a taco bar with tortillas, cooked protein (like seasoned ground beef or shredded chicken), and an array of toppings such as lettuce, tomatoes, cheese, salsa, and guacamole. The customization element of this meal is perfect for any picky eaters in the family.

Slow Cooker Meals 

By preparing ingredients in the morning, you can step back and let your slow cooker do the rest of the work for you. From hearty soups and stews to tender meat dishes, there are endless possibilities for easy weeknight dinners. 

For best results, sear any meat before adding it to the slow cooker to enhance the flavour and texture. Layer vegetables at the bottom of the slow cooker and place meat on top to ensure even cooking.

Quesadillas 

Not only is this option delicious, but it’s also incredibly simple and fast, too! Fill flour tortillas with cheese, cooked chicken or beans, and your favorite vegetables. Cook on a skillet until golden and crispy, then serve with salsa and sour cream for dipping. If you’re in a rush, you can simply use shredded cheese for a quick and easy meal.
